Recipe: Ambrosia Salad

A summertime favourite, add this easy-to-make and completely indulgent ‘fruit salad’ to the Christmas menu to cheer up even the grinchiest of guests.

We can't help but get a little nostalgic this time of year, which is why this Summertime favourite comes courtesy of yours truly, or more likely my Nana, who no doubt clipped it out of a Women's Weekly in the 60's.

Whilst definitely not fine dining (despite our best efforts to class it up above) it is life-changingly delicious!

INGREDIENTS

1 cup double cream (or sour cream for an apparently 'non-dessert’ first-course options.)

1 cup shredded coconut

1 cup marshmallows

1 cup pineapple pieces

1 orange, diced (important to cut through the sweetness)

1 cup canned fruit salad (any drained fruit can be used, according to preference)

Cherries, toasted coconut flakes, and walnuts to garnish.

METHOD

Drain fruit

Add all other ingredients together. Mix well.

Chill for at least four hours to allow flavours to blend.
