ABOUT / There's always going to be big shoes to fill when you take over a space from one of Toowoomba's most-loved dining rooms - especially one with a cult reputation. And yet Uno Mas - Spanish for "one more" - has slipped into 517 Ruthven Street with the quiet confidence of somewhere that knows exactly what it is - bringing that same spirit of creativity and care but to something altogether its own.
From the team behind Rosalie House, what you'll find in Uno Mas is an intimate Spanish-influenced share plate bar where the food is serious and the vibe pulls you in. And honestly, we're 100% here for it.
FOOD & WINE / The menu is tight and deliberate - the kind of list where everything has to earn its place, and it did. Playful, fun, and deliciously good.
Wagyu Beef Tartare with mac sauce, cured egg yolk and crisps. Melt-in-your-mouth Wagyu Denver Steak. Delicate Hiramasa kingfish with anchovy garum and sorrel. And my oh my - that octopus, off the coals, charred and tender, with a jamon XO that has absolutely no right to be that good. Finish with the burnt Basque cheesecake with Pedro Ximenez and strawberries. You'll thank yourself.
On the wine front, the team really know their cellars, and the list reflects that. Just say yes to whatever's recommended.
ATMOSPHERE / Dark, moody and deliberately intimate, with dark feature walls and an open kitchen that make the room feel like you're in on something. Grown-up, unhurried, 18+. The kind of room where a quick dinner quietly becomes a long one. No complaints.
MUST TRY / That octopus. That wagyu. And that Basque cheesecake. (In that order.)
HOURS / Wed and Thu 11:30am - 3pm, 5pm- late. Fri and Sat 12pm - late. Bookings recommended.
